This bottle comes from San Fabiano Calcinaia, an estate established in 1983 in Castellina in Chianti, nestled within the heart of Tuscany's historic Chianti Classico zone. While the winery produces highly praised traditional Sangiovese-based Chianti Classico wines, Cerviolo is their flagship Super Tuscan cuvée, designed to marry native character with international structure.
First created in the 1990s, Cerviolo is an estate-selection blend typically composed of Cabernet Sauvignon, Merlot, and Syrah. The grapes are sourced from high-density, low-yielding vineyards planted on classic Tuscan galestro (fragmented marl) and limestone soils. The wine undergoes fermentation in temperature-controlled tanks followed by maturation in French oak barriques for approximately 12 to 14 months, maximizing its structural longevity.
